"Cindy's Carrot Cake"

CHATTANOOGA (WRCB)-- Cindy Sexton tickled the taste buds on 3 Plus You with her special carrot cake recipe. Now you can enjoy this sweet treat anytime you like!

Cake Ingredients: 

  • 2 cups flour
  • 2 cups sugar
  • 1/2 teaspoon salt
  • 2 teaspoon baking soda
  • 2 teaspoon cinnamon
  • 4 eggs
  • 1 cup canola or vegetable oil
  • 3 cups finely grated carrots.

Directions:

  1. Preheat oven to 350 degrees. 
  2. Mix dry ingredients. 
  3. Beat eggs with a fork. 
  4. Stir in oil. 
  5. Fold into dry ingredients.
  6. Mix.  
  7. Fold in carrots. 
  8. Pour into greased and floured oblong pan. 
  9. Bake 45 to 50 minutes. 
  10. Check at 45 minutes.

Frosting Ingredients:

  • 6 oz cream cheese
  • Half stick of butter, softened
  • 1/4 t salt
  • I box confectioners sugar
  • 2 t vanilla
  • 1 c chopped pecans

Directions:

  1. Mix first five ingredients until smooth. 
  2. Frost cooled cake, sprinkle with pecans.
