Peanut Butter Bread Pudding
This delicious bread pudding is wonderful with chocolate sauce, or add about 1/2 cup of mini chocolate chips to the mixture just before baking.
•6 ounces torn French or Italian bread, about 4 to 5 cups
•3/4 cup creamy peanut butter
•4 cups 2% milk, divided
•2/3 cup brown sugar
•1/3 cup granulated sugar
•3 teaspoons vanilla
•4 large eggs
•1/2 cup mini chocolate chips, optional
Butter an 11x7-inch baking dish. Heat oven to 350°. Put torn bread into a medium bowl. Beat 3 cups of milk with the 4 eggs and vanilla; pour over the bread, stirring to blend.
In a saucepan, combine peanut butter, the remaining 1 cup milk and sugars. Heat the mixture over medium heat until peanut butter is melted and mixture is smooth. Blend the peanut butter mixture into the bread mixture. Add mini chocolate chips, if desired.
Pour into the prepared baking dish; bake for 45 to 55 minutes, or until set. Serve with a chocolate sauce1 or Easy Raspberry Sauce2.
Egg Friend Bread
Egg-Fried Bread recipe - 193 calories
4 white bread slices, cut in half
1 ounce butter
1 tablespoon milk
1. Beat the eggs and milk in a bowl.
2. Soak the bread into the eggs and milk mixture.
3. Heat the butter in a frying pan.
4. Fry the saturated bread until it turns golden brown on each side.
5. Serve hot.

Egg and Sausage Bake
Another version of the ever-popular breakfast casserole, made with bread, seasonings, eggs, and sausage.
•1 pound bulk pork sausage
•6 large eggs
•2 cups milk
•1 1/2 teaspoons dry mustard
•1/2 teaspoon salt
•1/4 teaspoon ground black pepper
•1/2 teaspoon ground paprika
•1/4 teaspoon ground nutmeg
•dash ground cayenne pepper
•3 slices French or Italian bread or other firm white bread, cubed
•1 cup shredded sharp Cheddar cheese, about 4 ounces
In a large skillet, crumble sausage; brown over medium heat until no longer pink. Drain well, patting with paper towels to absorb excess grease.
In a large bowl beat eggs, milk, and seasonings until smooth and well blended. Stir in the drained sausage and remaining ingredients (bread cubes and shredded cheese). Pour the mixture into a lightly buttered 8-inch square baking dish; cover and refrigerate overnight.
Remove from the refrigerator 1 hour before baking time. Bake in preheated 325° oven for 60 to 75 minutes, until eggs are set and lightly browned. A knife inserted near center should come out clean. Cool for 10 minutes before cutting and serving.
